Cocoa Brownies
These brownies are fantastic!! They are easy to make, have a wonderful flavor, and perfect texture. One word of warning, the batter tastes little funny, but the finished product does not. This recipe does contain xanthan gum, which is pricey, but lasts a long time. For info on xanthan gum go here.
Ingredients:
1/2 cup (1 stick) butter or substitute
1/2 cup cocoa
1 cup sugar
2 eggs
1 tsp. gluten free vanilla
1/2 cup gluten free flour blend
1/4 tsp. salt
1/4 tsp. xanthan gum
Preheat oven to 350 degrees. Melt butter in a medium sized saucepan over medium heat, stirring occasionally. Remove from heat. Add cocoa and sugar, stirring until well combined. Add eggs, one at a time, stirring after each addition. Stir in remaining ingredients, but do not over mix. Pour into greased 8 inch baking dish. Bake 25-30 minutes, until brownies pass the toothpick test. Allow to cool before cutting. Brownies can be stored in an airtight container on the counter (for a few days) or in the refrigerator (for a bit longer). Makes 16 two inch brownies.
Note: Ingredients like chopped walnuts or chocolate chips can also be added to the batter. I personally like to sprinkle a touch of powdered sugar over these brownies right after I remove them from the oven.
