Gluten Free....and Good?

Due to health reasons, I do my best to live a gluten free lifestyle.  It was very difficult in the beginning.  I often prepared two separate meals, one for my gluten loving family and one for myself.  I read every ingredients label, called every 1-800 number available, and found myself deeply missing some of the foods that I had to give up.  There are substitutes, but many of them are second rate (at best) and very expensive.  I just couldn't justify doubling our grocery budget for one person.  So, I accepted the challenge of modifying the foods that I already prepare, and that my family loves, making them gluten free.  The result....gluten free dishes that actually taste good.  Not just gluten free good....normal person good.  These items allow me to simplify meal preparation, keep a low budget and enjoy mealtime with my family.  I would like to share these recipes with you.
